Crispy Parmesan Zucchini Fries
Ingredients:
- 2 zucchinis
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 2 eggs, beaten
Instructions:
- Preheat the oven to 425°F (220°C).
- Slice zucchinis into sticks.
- In a bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
- Dip each zucchini stick in beaten eggs, then coat with the breadcrumb mixture.
- Place on a baking sheet and bake for 20 minutes, or until golden brown.
- Serve with marinara sauce for dipping.
