 Crispy Parmesan Zucchini Fries


Ingredients:

  • 2 zucchinis
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 2 eggs, beaten

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Slice zucchinis into sticks.
  3. In a bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  4. Dip each zucchini stick in beaten eggs, then coat with the breadcrumb mixture.
  5. Place on a baking sheet and bake for 20 minutes, or until golden brown.
  6. Serve with marinara sauce for dipping.
